Description

Fluffy Keto Cottage Cheese Cloud Bread is a simple, high-protein, low-carb bread perfect for any meal. It’s made with minimal ingredients and is incredibly versatile.


Ingredients

  • 6 eggs, separated
  • ½ teaspoon white vinegar
  • 4 ounces cottage cheese
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup whey protein powder
  • ¼ cup egg white protein powder
  • 1 tablespoon Allulose (optional)
  • 1 teaspoon vanilla extract (optional for French Toast only)
  • Optional toppings: bagel seasoning


Instructions

  1. Preheat your oven to 300°F (150°C). Whip egg whites with vinegar until stiff peaks form.
  2. In a separate bowl, whisk together egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, and optional Allulose and vanilla extract until smooth.
  3. Gently fold the egg yolk mixture into the whipped egg whites, keeping the mixture airy.
  4. Pour the batter into a greased and parchment-lined 5″x9″ loaf pan or onto a parchment-lined baking sheet for rolls.
  5. Bake for 50 minutes, or until a toothpick comes out clean and the top is golden brown.
  6. Turn off the oven, leave the bread inside for another 10 minutes without opening the door.
  7. Remove from the oven and let it cool slightly before serving.

Notes

  • Ensure eggs are at room temperature for best results when whipping egg whites.
  • The bread can be enjoyed warm, toasted, or cooled for sandwiches.
  • Vanilla extract is only needed if making a French toast version.
