Ingredients
- 1 lb lean ground beef (90% lean)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 head iceberg lettuce, chopped into bite-sized pieces
- 1 cup shredded sharp cheddar cheese
- 1/2 cup dill pickle slices, roughly chopped
- 1/4 cup white onion, finely diced
- 1/2 cup mayonnaise
- 2 tbsp sugar-free tomato ketchup
- 1 tbsp yellow mustard
- 1 tbsp dill pickle relish (unsweetened)
- 1 tsp white vinegar
- 1/2 tsp paprika
Instructions
- Heat a large skillet over medium-high heat on the stovetop.
- Add the ground beef to the hot skillet, breaking it apart with a wooden spoon into small crumbles as it cooks.
- Season the beef evenly with garlic powder, onion powder, salt, and black pepper while it browns.
- Cook the beef for 7–10 minutes until fully browned and no pink remains.
- Confirm the beef reaches an internal temperature of 160°F (71°C) for food safety.
- Remove the skillet from heat and drain any excess grease; set the beef aside to cool slightly.
- Whisk together the mayonnaise, ketchup, mustard, relish, vinegar, and paprika in a small bowl until smooth and creamy.
- Assemble the salads by dividing the chopped lettuce among four large bowls.
- Top the lettuce generously with the warm ground beef, shredded cheddar cheese, chopped pickles, and diced onions.
- Drizzle the homemade special sauce over the top of each bowl just before serving.
Notes
- Make the sauce first and chill it while you cook the meat; chilling improves flavor melding.
- Wash and dry the iceberg lettuce completely so the dressing adheres well.
- Sprinkle toasted white sesame seeds over the finished salad for a bun flavor mimic.
- Store cooked beef and sauce separately in airtight containers for up to 4 days in the fridge.
