Ingredients
- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 cups fresh spinach, chopped
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground chicken and cook, breaking it apart, until browned and cooked through, about 6 minutes.
- Remove chicken and set aside.
- Add chopped onion to the pot and sauté until softened, about 4 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Return cooked chicken to the pot and stir to combine.
- Pour in chicken broth and stir well.
- Add heavy cream, whole milk, dried basil, dried oregano, salt, black pepper, and red pepper flakes. Stir to combine.
- Bring soup to a simmer and cook for 12 minutes to blend flavors.
- Stir in Parmesan cheese until melted.
- Add mozzarella cheese and stir until melted and creamy.
- Add spinach, carrot, and celery, and cook for 6 minutes until vegetables are tender.
- Taste and adjust seasoning if needed.
- Ladle soup into bowls and serve immediately.
