- 1 1/2 pounds boneless skinless chicken breasts or cutlets
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons Italian seasoning or dried oregano and basil blend
- 2 tablespoons olive oil
- 2 cups marinara sauce or tomato basil pasta sauce
- 2 cloves garlic, minced (Optional)
- 1/2 teaspoon crushed red pepper flakes (Optional)
- 1/4 cup freshly grated Parmesan cheese (Optional)
- Fresh basil or parsley for serving (Optional)
Instructions
- Pat the chicken dry. Cut large breasts in half horizontally to create even thickness. Sprinkle both sides evenly with salt, pepper, and Italian seasoning, pressing the spices in.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers. Add the chicken in a single layer and sear for 3 to 4 minutes until the underside is deeply golden.
- Flip the chicken and cook for another 2 to 3 minutes on the second side until lightly browned. If using garlic, push the chicken to the edges, add the garlic to the center, and cook for 30 seconds until fragrant, stirring constantly.
- Pour the marinara or tomato basil sauce into the skillet around and over the chicken. Scrape up any browned bits from the bottom with a spatula. Stir in crushed red pepper flakes now if desired.
- Reduce the heat to medium-low for a gentle bubble. Cover and simmer for 8 to 10 minutes, turning the chicken once, until the thickest part reaches 165°F (74°C) and the sauce thickens slightly.
- Taste the sauce and adjust salt or pepper if necessary. Sprinkle Parmesan over the chicken, cover for 1 to 2 minutes to melt slightly, then top with chopped fresh basil or parsley if using.
- Serve the chicken with the tomato pan sauce over pasta, rice, or roasted vegetables.
