Description
Juicy baked chicken with golden potatoes and sweet cherry tomatoes in a zesty Italian herb sauce. A one-pan dinner bursting with Mediterranean flavor.
Ingredients
- 4 bone-in, skin-on chicken thighs (about 2 pounds)
- 1 ½ pounds baby gold or red potatoes, halved
- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- ½ cup shredded mozzarella cheese
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 tablespoons olive oil (for marinade)
- 2 tablespoons red wine vinegar or lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried rosemary
- ½ teaspoon dried thyme
- ¼ teaspoon red pepper flakes (optional)
- ½ teaspoon salt (for marinade)
- ¼ teaspoon black pepper (for marinade)
- 2 tablespoons chopped fresh basil or parsley
Instructions
- Preheat oven to 400°F. Lightly grease a large baking dish or oven-safe skillet with olive oil.
- Whisk together olive oil, vinegar, garlic, oregano, rosemary, thyme, red pepper flakes, salt, and pepper for the marinade in a small bowl.
- Bring a pot of salted water to a boil. Add potatoes and parboil for 5 minutes until slightly softened. Drain well and toss with 1 tablespoon olive oil, salt, and pepper.
- Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil and sear chicken thighs skin side down for 4–5 minutes per side until golden brown. Remove from heat.
- Arrange parboiled potatoes and cherry tomatoes around the chicken in the skillet. Pour the Italian marinade evenly over everything.
- Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F and potatoes are tender.
- Sprinkle mozzarella over the chicken and potatoes. Return to the oven for 5 minutes, or until the cheese melts and turns golden.
- Remove from the oven and let rest 5 minutes. Garnish with fresh basil or parsley before serving.
Notes
- For extra depth, marinate the chicken in the Italian dressing for up to 12 hours before baking.
