Ingredients
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1 cup diced tomatoes with green chiles drained
- 1 cup shredded cheddar cheese
- ½ cup baking mix
- 1 cup whole milk
- 3 large eggs
Instructions
- Preheat the oven to 400°F. Lightly grease a deep 9 inch pie dish.
- Cook the ground beef in a large skillet over medium heat for 8 to 10 minutes until browned. Drain excess fat.
- Stir in the taco seasoning and drained tomatoes with green chiles. Cook for 2 minutes until heated through.
- Spread the beef mixture evenly in the prepared pie dish.
- Sprinkle the shredded cheddar cheese evenly over the beef layer.
- Whisk together the baking mix, milk, and eggs in a medium bowl until smooth.
- Slowly pour the batter evenly over the beef and cheese layers.
- Bake uncovered for 25 to 30 minutes until the center is set and the top is lightly golden.
- Remove from the oven and let rest for 5 minutes before slicing.
