This impossible taco pie features seasoned ground beef and cheese under a simple Bisquick-style topping. It offers bold taco flavor for easy weeknight dinners.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 cup diced tomatoes with green chiles drained
  • 1 cup shredded cheddar cheese
  • ½ cup baking mix
  • 1 cup whole milk
  • 3 large eggs


Instructions

  1. Preheat the oven to 400°F. Lightly grease a deep 9 inch pie dish.
  2. Cook the ground beef in a large skillet over medium heat for 8 to 10 minutes until browned. Drain excess fat.
  3. Stir in the taco seasoning and drained tomatoes with green chiles. Cook for 2 minutes until heated through.
  4. Spread the beef mixture evenly in the prepared pie dish.
  5. Sprinkle the shredded cheddar cheese evenly over the beef layer.
  6. Whisk together the baking mix, milk, and eggs in a medium bowl until smooth.
  7. Slowly pour the batter evenly over the beef and cheese layers.
  8. Bake uncovered for 25 to 30 minutes until the center is set and the top is lightly golden.
  9. Remove from the oven and let rest for 5 minutes before slicing.
