Description

Honey Soy Glazed Green Beans with Shiitake Mushrooms offer an exciting twist on a common vegetable. These beans are coated in a rich honey glaze, complemented by the earthy flavor of shiitake mushrooms, creating a delicious side dish.


Ingredients

  • 2 cups shiitake mushrooms, halved (stems removed)
  • 1 pound frozen green beans
  • 2 tablespoons olive oil, divided
  • 3 garlic cloves, minced
  • 1 inch ginger, minced
  • 1 shallot, sliced or minced
  • 1 Thai chili, thinly sliced
  • 2 scallions, thinly sliced
  • 1/2 cup soy sauce
  • Juice of one lime
  • 2 tablespoons honey
  • 1 tablespoon toasted sesame oil
  • 1/2 cup water
  • White sesame seeds, for garnish


Instructions

  1. Heat 1 tbsp olive oil in a pan over high heat. Add mushrooms and sauté for 5-7 minutes until golden.
  2. Reduce heat to medium. Add remaining olive oil, shallots, garlic, ginger, and chilies. Cover and cook for 5 minutes to allow ingredients to sweat.
  3. Add green beans, soy sauce, lime juice, water, and honey. Toss well, cover, and cook for 5 minutes.
  4. Remove lid and let excess water evaporate.
  5. Stir in scallions and sesame oil.
  6. Garnish with sesame seeds and serve immediately.
