Ingredients
- 1 cup softened butter
- 1 egg
- 1 cup honey (creamed honey used)

- 1 ½ cups sweetened shredded coconut
- 2 cups regular flour
- 2 cups quick oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Beat softened butter on medium-high speed until light and fluffy (1-2 minutes).
- Add egg, honey, and vanilla extract; beat until smooth (1-2 minutes).
- Add shredded coconut, flour, oats, baking powder, baking soda, and salt. Mix until uniform dough forms.
- Scoop about 2 tablespoons of dough, roll into balls, and place on prepared sheet about 1½ inches apart.
- Lightly flatten each ball with hands.
- Bake about 8 minutes, or until edges are lightly golden.
- Remove cookies and cool on wire rack.
- Repeat with remaining dough if necessary.
- Store cooled cookies in an airtight container at room temperature for up to 1 week or freeze for up to 1 month.
