Description
These honey mustard glazed carrots are sweet, tangy, and roasted until tender. A simple vegetable side dish made with just a few ingredients.
Ingredients
- 1 1/2 pounds whole carrots peeled and trimmed
- 3 tablespoons honey
- 2 tablespoons stone ground mustard
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Instructions
- Preheat oven to 400°F and line a rimmed baking sheet with parchment paper.
- Place carrots on the baking sheet and drizzle with olive oil and salt, tossing to coat evenly.
- In a small bowl, whisk together honey and mustard until smooth.
- Drizzle half of the honey mustard mixture over the carrots and toss until well coated.
- Arrange carrots in a single layer on the baking sheet.
- Roast for 18 to 22 minutes, turning once, until carrots are fork tender and lightly caramelized.
- Remove from oven and drizzle with remaining honey mustard glaze.
- Toss gently and serve warm.
