Description
Sweet and caramelized honey maple roasted carrots with warm spices. This easy roasted carrots recipe is a crowd-pleasing side for any meal.
Ingredients
- 2 pounds medium carrots peeled and sliced on a long diagonal into 3-inch pieces
- 2 tablespoons olive oil
- 1 tablespoon pure maple syrup
- 2 tablespoons honey
- 1 1/2 teaspoons ground coriander
- 1 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon sesame seeds
- 1 tablespoon fresh thyme leaves
- 1 tablespoon thinly sliced fresh chives
- 1/2 cup pomegranate arils
Instructions
- Heat oven to 450°F and lightly oil a large rimmed baking sheet.
- Add carrots to the baking sheet and drizzle with olive oil, maple syrup, and honey.
- Sprinkle coriander, salt, and black pepper over the carrots and toss until evenly coated.
- Spread carrots in a single layer with space between pieces.
- Roast for 10 minutes, then stir to redistribute.
- Continue roasting for 15 to 20 minutes more, stirring every 5 minutes, until carrots are tender and caramelized at the edges.
- Remove from oven and immediately sprinkle with sesame seeds, thyme, and chives, tossing gently to coat.
- Transfer to a serving dish and scatter pomegranate arils over the top before serving.
