Description

Tender grilled chicken glazed with honey and fresh lime stacks over fluffy jasmine rice and creamy avocado salsa. A quick weeknight dinner.


Ingredients

  • 1 pound boneless skinless chicken breasts (about 3/4 inch thick)
  • 3 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup jasmine rice
  • 1 and 1/2 cups water
  • 1/4 teaspoon salt (for rice)
  • 1 large ripe avocado, diced
  • 1/4 cup finely chopped red onion
  • 3 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice (for topping)
  • Pinch of salt (for topping)
  • Lime wedges (for serving)
  • Extra cilantro leaves (for serving)


Instructions

  1. Whisk together honey, 3 tablespoons lime juice, lime zest, minced garlic, cumin, salt, and pepper in a bowl until smooth.
  2. Place chicken breasts in a shallow dish and pour marinade over top, turning to coat all sides. Cover and refrigerate for 30 minutes.
  3. Rinse jasmine rice under cold water in a fine-mesh strainer until water runs clear. Combine rice, 1 and 1/2 cups water, and 1/4 teaspoon salt in a medium saucepan.
  4. Bring rice to a boil over high heat, then reduce to low, cover with a tight lid, and simmer for 15 minutes without lifting the lid. Remove from heat and let stand covered for 5 minutes.
  5. While rice cooks, preheat grill or grill pan to medium-high heat and lightly oil the grates. Remove chicken from marinade, letting excess drip off, and place on hot grill.
  6. Grill chicken for 6 to 7 minutes per side until internal temperature reaches 165°F when tested with an instant-read thermometer in the thickest part. Transfer to a plate and let rest for 5 minutes, then slice into strips.
  7. Combine diced avocado, red onion, cilantro, olive oil, 1 tablespoon lime juice, and pinch of salt in a bowl, tossing gently to mix.
  8. Fluff rice with a fork and divide among four plates. Top each portion with sliced chicken, then spoon avocado mixture over the top. Garnish with lime wedges and cilantro leaves.
