Ingredients
- 1 pound boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 2 ripe avocados, diced
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
- 1 cup diced tomatoes
- 2 tablespoons finely chopped red onion
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon olive oil
- 1/4 teaspoon salt
Instructions
- Whisk together honey, lime juice, and olive oil in a small bowl. Set aside.
- Season chicken breasts evenly with salt, pepper, garlic powder, and chili powder.
- Heat a skillet over medium heat and add a small drizzle of oil. Cook chicken for 5 to 6 minutes per side until fully cooked and golden.
- Brush the honey lime mixture over the chicken during the last 2 minutes of cooking to create a glaze.
- Remove chicken from heat, let rest for 5 minutes, then slice into thick pieces.
- Gently mix diced avocado with lime juice and salt in a bowl.
- Combine diced tomatoes, red onion, cilantro, olive oil, and salt in another bowl.
- To assemble, layer sliced chicken on a plate, top with avocado mixture, then spoon the tomato mixture over the top.
- Serve immediately.
