Ingredients

  • 1 pound boneless skinless chicken breasts

  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 ripe avocados, diced
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • 1 cup diced tomatoes
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt


Instructions

  1. Whisk together honey, lime juice, and olive oil in a small bowl. Set aside.
  2. Season chicken breasts evenly with salt, pepper, garlic powder, and chili powder.
  3. Heat a skillet over medium heat and add a small drizzle of oil. Cook chicken for 5 to 6 minutes per side until fully cooked and golden.
  4. Brush the honey lime mixture over the chicken during the last 2 minutes of cooking to create a glaze.
  5. Remove chicken from heat, let rest for 5 minutes, then slice into thick pieces.
  6. Gently mix diced avocado with lime juice and salt in a bowl.
  7. Combine diced tomatoes, red onion, cilantro, olive oil, and salt in another bowl.
  8. To assemble, layer sliced chicken on a plate, top with avocado mixture, then spoon the tomato mixture over the top.
  9. Serve immediately.
