Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 2 cups cooked white or brown rice
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped romaine lettuce
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Whisk together honey, lime juice, olive oil, garlic, salt, black pepper, and cumin in a bowl. Add chicken and coat well. Marinate for at least 15 minutes.
  2. Heat a grill pan or skillet over medium heat. Cook chicken for 5 to 7 minutes per side until fully cooked and internal temperature reaches 165 degrees F.
  3. Transfer chicken to a plate and let it rest for 5 minutes, then slice into strips.
  4. While chicken cooks, prepare the dressing by whisking olive oil, lime juice, honey, salt, and black pepper in a small bowl.
  5. Divide cooked rice evenly among serving bowls.
  6. Arrange sliced chicken, avocado, cherry tomatoes, romaine lettuce, black beans, and corn over the rice.
