Ingredients
- 1 pound boneless skinless chicken breasts
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 2 cups cooked white or brown rice
- 1 large avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cup chopped romaine lettuce
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Whisk together honey, lime juice, olive oil, garlic, salt, black pepper, and cumin in a bowl. Add chicken and coat well. Marinate for at least 15 minutes.
- Heat a grill pan or skillet over medium heat. Cook chicken for 5 to 7 minutes per side until fully cooked and internal temperature reaches 165 degrees F.
- Transfer chicken to a plate and let it rest for 5 minutes, then slice into strips.
- While chicken cooks, prepare the dressing by whisking olive oil, lime juice, honey, salt, and black pepper in a small bowl.
- Divide cooked rice evenly among serving bowls.
- Arrange sliced chicken, avocado, cherry tomatoes, romaine lettuce, black beans, and corn over the rice.
- Drizzle dressing evenly over each bowl.
- Serve immediately.
