Ingredients
- 2 pounds carrots, peeled and cut into 2-inch pieces
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon unsalted butter, melted
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat oven to 425°F and line a large baking sheet with parchment paper.
- In a large bowl, whisk together olive oil, honey, melted butter, salt, pepper, and garlic powder.
- Add carrots and toss until evenly coated.
- Spread carrots in a single layer on the baking sheet.
- Roast for 25 to 30 minutes, tossing halfway through, until tender and lightly caramelized.
- Transfer carrots to a serving dish, drizzle with any glaze left on the pan, and sprinkle with chopped parsley.
Notes
- For extra shine and flavor, brush carrots with an additional teaspoon of honey right after removing from the oven.
