Description

Sweet and savory roasted carrots coated in a buttery honey glaze. A simple, elegant side dish perfect for spring dinners or holiday tables.


Ingredients

  • 2 pounds carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter, melted
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Preheat oven to 425°F and line a large baking sheet with parchment paper.
  2. In a large bowl, whisk together olive oil, honey, melted butter, salt, pepper, and garlic powder.
  3. Add carrots and toss until evenly coated.
  4. Spread carrots in a single layer on the baking sheet.
  5. Roast for 25 to 30 minutes, tossing halfway through, until tender and lightly caramelized.
  6. Transfer carrots to a serving dish, drizzle with any glaze left on the pan, and sprinkle with chopped parsley.

Notes

  • For extra shine and flavor, brush carrots with an additional teaspoon of honey right after removing from the oven.
