Ingredients
- 1 lb medium carrots, peeled and cut into 2-inch sticks (or halved baby carrots)
- 1 ½ tablespoons olive oil
- 2 tablespoons honey
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon cinnamon (optional)
- ⅓ cup crumbled feta cheese
- ¼ cup chopped pecans, toasted
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your air fryer to 380°F (193°C) for 3 minutes.
- Place the carrot sticks in a large mixing bowl.
- Drizzle the olive oil and honey over the carrots, then sprinkle with salt, pepper, garlic powder, and cinnamon.
- Toss well until every carrot piece is thoroughly coated in the glaze.
- Arrange the carrots in a single layer in the air fryer basket; work in batches if necessary to avoid overcrowding.
- Air fry for 12–15 minutes, shaking the basket halfway through cooking.
- Check for doneness; carrots should be fork-tender and slightly caramelized on the edges.
- Transfer the hot carrots to a serving platter.
- Immediately sprinkle the crumbled feta over the warm carrots so it softens slightly.
- Top with the toasted chopped pecans and fresh parsley.
- Serve warm immediately.

- Nut-Free: Swap pecans for toasted sunflower seeds or pumpkin seeds (pepitas).
- Dairy-Free: Use a vegan feta crumble or omit the cheese and add a pinch of flaky sea salt instead.
- Maple Twist: Replace honey with pure maple syrup.
