Description

Sweet Honey Glazed Air Fryer Carrots topped with salty feta and crunchy pecans. A 20-minute side dish perfect for holiday dinners or weeknight meals.

Ingredients

  • 1 lb medium carrots, peeled and cut into 2-inch sticks (or halved baby carrots)
  • 1 ½ tablespoons olive oil
  • 2 tablespoons honey
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cinnamon (optional)
  • ⅓ cup crumbled feta cheese
  • ¼ cup chopped pecans, toasted
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your air fryer to 380°F (193°C) for 3 minutes.
  2. Place the carrot sticks in a large mixing bowl.
  3. Drizzle the olive oil and honey over the carrots, then sprinkle with salt, pepper, garlic powder, and cinnamon.
  4. Toss well until every carrot piece is thoroughly coated in the glaze.
  5. Arrange the carrots in a single layer in the air fryer basket; work in batches if necessary to avoid overcrowding.
  6. Air fry for 12–15 minutes, shaking the basket halfway through cooking.
  7. Check for doneness; carrots should be fork-tender and slightly caramelized on the edges.
  8. Transfer the hot carrots to a serving platter.
  9. Immediately sprinkle the crumbled feta over the warm carrots so it softens slightly.
  10. Top with the toasted chopped pecans and fresh parsley.
  11. Serve warm immediately.

Notes

  • Nut-Free: Swap pecans for toasted sunflower seeds or pumpkin seeds (pepitas).
  • Dairy-Free: Use a vegan feta crumble or omit the cheese and add a pinch of flaky sea salt instead.
  • Maple Twist: Replace honey with pure maple syrup.
  • Spicy Kick: Add a pinch of cayenne pepper or red pepper flakes to the honey mixture.
  • Store leftovers in an airtight container for up to 3–4 days in the fridge.
  • Reheat in the air fryer at 350°F for 3–5 minutes.
