Ingredients
- 1 pound large shrimp, peeled and deveined
- 8 ounces smoked beef sausage, sliced into ½-inch rounds
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- ¼ cup honey
- ¼ cup low-sodium soy sauce
- 1 tablespoon lemon juice
- ¼ teaspoon crushed red pepper flakes (optional)
- 2 cups cooked jasmine rice or quinoa
- 2 tablespoons chopped parsley or cilantro for garnish
Instructions
- In a small bowl, whisk together honey, soy sauce, lemon juice, garlic, and red pepper flakes. Set aside.
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook for about 5 minutes, stirring occasionally, until browned. Remove from the pan and set aside.
- In the same skillet, add shrimp and season with salt and pepper. Cook for 2–3 minutes per side until pink and opaque. Remove from the pan and set aside with the sausage.
- Add broccoli and 2 tablespoons of water to the skillet. Cover and steam for 3–4 minutes until tender-crisp. Uncover and cook for 1 more minute to evaporate any excess water.
- Return shrimp and sausage to the skillet. Pour the honey garlic sauce over the mixture and toss to coat. Simmer for 2–3 minutes, stirring occasionally, until the sauce thickens slightly.
- Spoon the mixture over cooked rice or quinoa. Garnish with fresh parsley or cilantro before serving.
Notes
- This recipe uses pre-cooked smoked sausage.
- Adjust red pepper flakes for desired heat level.
- You can substitute chicken breast for sausage if preferred.
