Ingredients
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 pound lean ground beef (90% lean)
- 3 cups fresh broccoli florets
- 3 cloves garlic, minced
- 1 tablespoon water
- ⅓ cup low-sodium soy sauce
- ¼ cup honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- ½ teaspoon crushed red pepper flakes (optional)
- 1 tablespoon cornstarch
- 2 tablespoons cold water (for slurry)
- 2 cups cooked jasmine rice (to serve)
- 1 tablespoon toasted sesame seeds (for garnish)
- 2 green onions, thinly sliced (for garnish)
Instructions
- In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and red pepper flakes. In another small bowl, combine cornstarch with cold water to make a slurry. Set both aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Add the ground beef to the pan. Cook for 5–6 minutes, breaking it apart with a spatula, until browned and no longer pink. Drain excess fat if needed.
- Stir in broccoli florets and add 1 tablespoon of water. Cover and steam for 3–4 minutes until broccoli is tender-crisp.
- Pour the honey garlic sauce over the beef and broccoli. Stir well and let simmer for 2 minutes.
- Stir in the cornstarch slurry and cook for 1–2 minutes, stirring constantly, until the sauce thickens and coats the beef and broccoli evenly.
