Description

A sweet and savory one-pan meal with roasted potatoes, broccoli, and a rich garlic glaze. Easy and satisfying.

Ingredients

  • 1 pound chicken sausage sliced into rounds
  • 1 medium sweet potato diced
  • 3 small gold potatoes diced
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 quarter teaspoon black pepper
  • 2 tablespoons olive oil (for sauce)
  • 2 tablespoons unsalted butter (for sauce)
  • 2 tablespoons honey (for sauce)
  • 1 tablespoon brown sugar (for sauce)
  • 3 cloves garlic minced (for sauce)
  • 1 quarter teaspoon salt (for sauce)
  • 1 tablespoon Dijon mustard (for sauce)
  • 1 half teaspoon dried basil (for sauce)
  • 1 half teaspoon dried oregano (for sauce)

Instructions

  1. Preheat oven to 400 degrees F. Line a large sheet pan with parchment or lightly grease it.
  2. In a small bowl, whisk together 2 tablespoons olive oil, melted butter, honey, brown sugar, garlic, salt, Dijon mustard, dried basil, and dried oregano. Set aside 2 tablespoons of the sauce for finishing.
  3. Spread diced sweet potato and gold potatoes on the sheet pan. Drizzle with 1 tablespoon olive oil, sprinkle with 1 teaspoon salt and 1 quarter teaspoon black pepper, and toss to coat evenly.
  4. Add sliced chicken sausage to the pan and brush generously with the prepared sauce.
  5. Roast for 20 minutes until the potatoes begin to soften and the sausage starts to brown.
  6. Toss broccoli with a small drizzle of olive oil, salt, and pepper, then add it to the sheet pan.
  7. Return to the oven and bake for another 5 to 10 minutes until broccoli is tender and slightly crisp and potatoes are fully cooked.
  8. Remove from oven and drizzle or brush with the reserved honey garlic sauce. Serve warm.

Notes

  • Spread everything in a single layer on the pan to ensure proper roasting and caramelization instead of steaming.
