Description
A sweet and savory one-pan meal with roasted potatoes, broccoli, and a rich garlic glaze. Easy and satisfying.
Ingredients
- 1 pound chicken sausage sliced into rounds
- 1 medium sweet potato diced
- 3 small gold potatoes diced
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 quarter teaspoon black pepper
- 2 tablespoons olive oil (for sauce)
- 2 tablespoons unsalted butter (for sauce)
- 2 tablespoons honey (for sauce)
- 1 tablespoon brown sugar (for sauce)
- 3 cloves garlic minced (for sauce)
- 1 quarter teaspoon salt (for sauce)
- 1 tablespoon Dijon mustard (for sauce)
- 1 half teaspoon dried basil (for sauce)
- 1 half teaspoon dried oregano (for sauce)
Instructions
- Preheat oven to 400 degrees F. Line a large sheet pan with parchment or lightly grease it.
- In a small bowl, whisk together 2 tablespoons olive oil, melted butter, honey, brown sugar, garlic, salt, Dijon mustard, dried basil, and dried oregano. Set aside 2 tablespoons of the sauce for finishing.
- Spread diced sweet potato and gold potatoes on the sheet pan. Drizzle with 1 tablespoon olive oil, sprinkle with 1 teaspoon salt and 1 quarter teaspoon black pepper, and toss to coat evenly.
- Add sliced chicken sausage to the pan and brush generously with the prepared sauce.
- Roast for 20 minutes until the potatoes begin to soften and the sausage starts to brown.
- Toss broccoli with a small drizzle of olive oil, salt, and pepper, then add it to the sheet pan.
- Return to the oven and bake for another 5 to 10 minutes until broccoli is tender and slightly crisp and potatoes are fully cooked.
- Remove from oven and drizzle or brush with the reserved honey garlic sauce. Serve warm.
