Description

Succulent bone-in chicken thighs slow-cooked with tender potatoes and green beans in a sticky honey garlic sauce. This one-pot meal provides rich flavor with minimal active preparation.


Ingredients

  • 3 pounds bone-in skin-on chicken thighs
  • 1 pound baby red potatoes
  • 1 pound baby carrots
  • 1 pound fresh green beans
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 3 cloves garlic (minced)
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Whisk the low-sodium soy sauce, honey, ketchup, minced garlic, dried basil, dried oregano, crushed red pepper flakes, and black pepper in a medium bowl until combined.
  2. Cut the baby red potatoes in half and trim the ends of the green beans.
  3. Arrange the halved potatoes and baby carrots in an even layer across the bottom of a 6-quart slow cooker.
  4. Place the chicken thighs skin-side up directly on top of the root vegetables.
  5. Pour the prepared sauce mixture evenly over the chicken and vegetables to coat them well.
  6. Cover the slow cooker and cook on Low heat for 6 to 7 hours or High heat for 3 to 4 hours until the potatoes are fork-tender.
  7. Open the lid quickly and stir in the green beans, submerging them slightly in the sauce.
  8. Cover and continue cooking on the same heat setting for 30 more minutes until the beans are tender but still bright green.
  9. Verify the thickest part of the chicken thighs reaches an internal temperature of 165°F.
  10. Transfer the chicken to a foil-lined baking sheet and broil on high for 3 minutes to crisp the skin.
  11. Serve the chicken alongside the vegetables and drizzle with the remaining sauce from the pot.
  12. Garnish the dish with chopped fresh parsley immediately before serving.
