  • 2½ cups fresh strawberries hulled and quartered divided
  • ¾ cup granulated sugar
  • ½ cup water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon unsalted butter

Instructions

  1. Add 1½ cups of the strawberries, sugar, and water to a medium saucepan over medium heat.
  2. Cook, stirring frequently, until the sugar dissolves and the mixture comes to a gentle boil.
  3. Reduce heat to medium low and stir in the lemon juice and vanilla extract.
  4. In a small bowl, whisk together the cornstarch and cold water until smooth.
  5. Pour the cornstarch mixture into the saucepan while stirring constantly.
  6. Simmer for 3 to 4 minutes until the sauce thickens and becomes glossy.
  7. Remove the pan from heat and stir in the butter until fully melted.
  8. Let the sauce cool for 10 to 15 minutes, then fold in the remaining fresh strawberries.
  9. Cool to room temperature or refrigerate before serving.
