Description

Ingredients

  • Crust: 2 1/4 cups all-purpose flour
  • Crust: 1 teaspoon granulated sugar

  • Crust: 12 tablespoons cold unsalted butter cut into cubes

  • Crust: 8 to 10 tablespoons ice water
  • Filling: 2 1/2 cups sliced plums pitted
  • Filling: 1/4 cup granulated sugar
  • Filling: 1 1/2 tablespoons cornstarch
  • Egg Wash: 1 large egg
  • Egg Wash: 1 tablespoon water


Instructions

  1. Whisk the flour, sugar, and salt in a large bowl.
  2. Add the cold butter. Work it into the flour with a pastry cutter until pea-sized pieces remain.
  3. Stir in the vinegar. Add ice water one tablespoon at a time until the dough forms a ball.
  4. Shape the dough into a flat disk, wrap it, and refrigerate for 1 hour.
  5. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  6. Stir the sliced plums, sugar, and cornstarch together until the plums are coated.
  7. Whisk the egg and water for the egg wash.
  8. Divide the chilled dough into 8 equal parts. Roll each into a 6 inch circle.
  9. Spoon the plum filling onto the center of each circle. Brush the edges with egg wash, fold the dough over, and crimp the edges with a fork. Cut small slits on top.
  10. Place the turnovers on the baking sheet. Bake for 15 to 18 minutes until golden brown and crisp.
  11. Cool slightly before you serve them.
