Ingredients

  • 1/3 cup maple syrup or honey
  • 1/4 cup olive oil or melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves or allspice
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dried fruit (such as cranberries, raisins, or chopped dates), added after baking


Instructions

  1. Preheat oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine oats, nuts, shredded coconut, pumpkin seeds, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a small bowl, whisk together maple syrup, oil, and vanilla extract.
