Description

Chewy homemade granola bars made with oats, peanut butter, honey, and chocolate chips. Easy no bake snack for busy days.


Ingredients

  • 1 cup creamy peanut butter
  • ⅓ cup honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon fine sea salt
  • 2½ cups old fashioned rolled oats
  • ⅓ cup mini chocolate chips
  • 3 tablespoons pepitas


Instructions

  1. Line an 8 by 8 inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, stir together the peanut butter, honey, vanilla extract, and salt until smooth and fully combined.
  3. Add the rolled oats, mini chocolate chips, and pepitas to the bowl.
  4. Stir thoroughly until the mixture is evenly mixed and begins to hold together.
  5. Transfer the mixture to the prepared pan and spread evenly.
  6. Place a sheet of parchment paper on top and press firmly using the back of a measuring cup to compact the mixture.
  7. Refrigerate for at least 1 hour until firm.
  8. Lift out of the pan and slice into bars.
