Ingredients

  • 1/3 cup Dutch processed cocoa
  • 1/2 cup + 2 tablespoons boiling water
  • 2 oz unsweetened chocolate, finely chopped
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup + 2 tablespoons vegetable oil
  • 2 large eggs
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 1/2 cups granulated sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Adjust oven rack to middle lower position. Preheat oven to 350°F.
  2. Line a 9×13 inch pan with foil, leaving a 1-2 inch overhang on all sides. Spray the foil with nonstick cooking spray.
  3. In a large bowl, whisk boiling water and cocoa powder until smooth. Add unsweetened chocolate and whisk until melted. Whisk in butter and oil.
  4. Whisk in eggs, egg yolks, and vanilla until smooth.
  5. Whisk in sugar until combined. Fold in flour, salt, and chocolate chips using a spatula. Do not overmix.
  6. Transfer batter to the prepared pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Remove pan from oven and place on a wire rack to cool completely (about 1.5 hours).
  8. Remove foil liner to lift brownies out of the pan. Cut and serve.
