Description
A simple, luscious homemade blueberry sauce with sweet lemon flavor. This thick topping works well on pancakes, waffles, or desserts. It uses fresh or frozen berries for year-round fruit flavor.
Ingredients
- 2 cups fresh blueberries
- 1/2 cup cold water
- 1/3 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon fresh lemon juice
- 1 pinch kosher salt
Instructions
- Wash blueberries and remove any stems.
- Whisk sugar, cornstarch, and salt together in a medium saucepan.
- Pour cold water into the dry mix and whisk until smooth.
- Stir the blueberries into the liquid mixture until coated.
- Place the saucepan over medium-high heat and bring to a rolling boil.
- Reduce heat to medium-low immediately when bubbles appear.
- Simmer for 7 minutes, stirring often to stop scorching.
- Press a few berries against the pot side with a spoon to release juice.
- Remove the pan from heat when the sauce coats the spoon back.
- Stir in the fresh lemon juice.
- Cool the sauce for 15 minutes before serving to set.
- Store leftovers in a sealed container in the refrigerator for up to five days.
