Description

Classic Holiday Toffee is a sweet, crunchy treat perfect for festive occasions. This recipe guides you through making a delicious homemade toffee with a pecan base and chocolate topping.

Ingredients

  • 1 cup chopped pecans or almonds
  • 1 cup granulated sugar
  • 1 cup butter
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 teaspoon vanilla
  • Chocolate chips
  • Additional chopped pecans for garnish
  • Flaked sea salt (optional)

Instructions

  1. Prepare a 9×9 inch baking dish lined with parchment paper. Spread 1 cup of chopped pecans evenly on the bottom.
  2. In a pot, combine butter, sugar, water, and salt. Heat over medium heat, stirring until melted and bubbling. Attach a candy thermometer and aim for 300°F (hard crack stage).
  3. Stir mixture occasionally while heating. Once it reaches 300°F, remove from heat. Stir in 1 teaspoon of vanilla.
  4. Pour the hot caramel over the pecans in the dish, spreading evenly. Let cool for 2 minutes. Sprinkle chocolate chips over the warm caramel.
  5. Cover the dish with foil or a baking sheet to melt the chocolate. After 4 minutes, uncover and swirl the melted chocolate. Sprinkle with chopped pecans and optional sea salt.
  6. Let the toffee cool completely for about 4 hours, or chill to speed up the process.
  7. Remove the toffee from the pan using the parchment paper. Cut into pieces or break apart. Serve.

Notes

  • Ensure your candy thermometer is accurate.
  • Work quickly when pouring the caramel to avoid it hardening too soon.
  • Allowing the chocolate to melt from the residual heat of the caramel usually works best.
