Description
These Holiday Cranberry Brie Puff Pastry Bites are a festive and easy appetizer perfect for any celebration. They combine creamy brie, tart cranberry sauce, and crunchy pistachios in a flaky puff pastry shell.
Ingredients
- 1 sheet frozen puff pastry (from a 17-oz. box), thawed
- 4 oz. brie cheese
- ½ cup cranberry sauce, homemade or canned
- 3 Tbsp. raw shelled pistachios, chopped
- 1 egg, beaten (for egg wash)
- Fresh rosemary sprigs for garnish (optional)
- Flaky sea salt and ground black pepper (optional)
Instructions
- Thaw the puff pastry according to package directions. Place brie in the freezer for about 20 minutes to firm it up.
- Preheat oven to 400°F (200°C). Spray a 24-cup mini muffin pan with nonstick cooking spray.
- On a lightly floured surface, roll puff pastry into a 10-by-15-inch rectangle. Cut into 24 squares.
- Press one pastry square into each muffin pan well.
- Cut the firm brie into 24 small pieces. Place one piece in the center of each pastry cup.
- Top each brie piece with about 1 teaspoon of cranberry sauce. Brush pastry edges with beaten egg.
- Sprinkle chopped pistachios over each bite.
- Bake for 15 minutes, until pastry is golden brown and puffed, and cheese is melted.
- Let bites cool in pan for 5 minutes, then remove to a serving platter.
- Garnish with rosemary, sea salt, and pepper if desired before serving.
Notes
- Freezing the brie briefly makes it easier to cut into small, uniform pieces.
- Ensure the puff pastry is fully thawed but still cold when you work with it.
- For a homemade cranberry sauce, combine 1 cup fresh cranberries, 1/4 cup sugar, and 2 tablespoons water in a saucepan. Cook over medium heat until cranberries burst and sauce thickens.
