Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef (85% lean)
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 4 medium russet potatoes, thinly sliced (¼ inch thick)
- ½ cup low-sodium beef broth
- 1½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté 2 to 3 minutes until fragrant.
- Add ground beef, breaking it apart with a spoon. Season with Italian seasoning, paprika, salt, and pepper. Cook 6 to 8 minutes until browned and no longer pink. Drain excess fat.
- Arrange half the potato slices evenly in the prepared dish.
- Spread half of the cooked beef mixture over the potatoes and top with half the cheddar cheese.
- Repeat layers with remaining potatoes, beef, and cheddar.
- Pour beef broth evenly over the top to keep the casserole moist.
- Cover tightly with foil and bake 35 to 40 minutes until potatoes are tender.
- Remove foil, sprinkle Parmesan cheese on top, and bake uncovered 10 more minutes until golden and bubbly.
- Let rest 5 minutes before serving. Garnish with parsley and serve warm.
