Description

This cheesy hobo casserole with ground beef and potatoes is an easy, comforting dinner that bakes to golden perfection in under an hour. It is hearty and family-friendly, layered with seasoned beef, tender potatoes, and melted cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef (85% lean)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 4 medium russet potatoes, thinly sliced (¼ inch thick)
  • ½ cup low-sodium beef broth
  • 1½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté 2 to 3 minutes until fragrant.
  3. Add ground beef, breaking it apart with a spoon. Season with Italian seasoning, paprika, salt, and pepper. Cook 6 to 8 minutes until browned and no longer pink. Drain excess fat.
  4. Arrange half the potato slices evenly in the prepared dish.
  5. Spread half of the cooked beef mixture over the potatoes and top with half the cheddar cheese.
  6. Repeat layers with remaining potatoes, beef, and cheddar.
  7. Pour beef broth evenly over the top to keep the casserole moist.
  8. Cover tightly with foil and bake 35 to 40 minutes until potatoes are tender.
  9. Remove foil, sprinkle Parmesan cheese on top, and bake uncovered 10 more minutes until golden and bubbly.
  10. Let rest 5 minutes before serving. Garnish with parsley and serve warm.
