Ingredients
- 2 large sweet potatoes, peeled and cut into 3/4-inch cubes

Instructions
- Preheat your oven to 425°F and line a large rimmed baking sheet with parchment paper.
- Toss the sweet potato cubes with 1 tablespoon olive oil, 1/2 teaspoon salt, black pepper, and 1/2 teaspoon garlic powder in a bowl until evenly coated.
- Spread the potatoes in a single layer on the baking sheet and roast for 25 to 30 minutes, tossing halfway, until tender and caramelized edges appear.
- While the potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat.
