Ingredients

  • 2 large sweet potatoes, peeled and cut into 3/4-inch cubes
  • 1 tablespoon olive oil

  • 1 lb ground beef (90% lean)
  • 1 small yellow onion, diced

  • 1 cup low-fat cottage cheese
  • 1 large avocado, sliced
  • 2 tablespoons hot honey
  • 2 tablespoons chopped fresh cilantro
  • 1 jalapeño, thinly sliced (optional)


Instructions

  1. Preheat your oven to 425°F and line a large rimmed baking sheet with parchment paper.
  2. Toss the sweet potato cubes with 1 tablespoon olive oil, 1/2 teaspoon salt, black pepper, and 1/2 teaspoon garlic powder in a bowl until evenly coated.
  3. Spread the potatoes in a single layer on the baking sheet and roast for 25 to 30 minutes, tossing halfway, until tender and caramelized edges appear.
  4. While the potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  5. Add the diced onion to the skillet and sauté for 3 to 4 minutes until softened and translucent.
  6. Add the ground beef to the skillet and cook for 6 to 8 minutes, breaking it apart with a wooden spoon, until browned and no pink remains.
  7. Stir in the chili powder, cumin, smoked paprika, garlic powder, onion powder, and remaining salt, toasting the spices for 1 minute.
  8. Pour in the water and simmer for 2 to 3 minutes until the liquid reduces and coats the meat in a rich sauce.
  9. Verify the beef has reached a safe internal temperature of at least 160°F before removing from heat.
  10. Assemble the bowls by dividing the roasted sweet potatoes and seasoned beef among four containers.
  11. Top each bowl with a 1/4 cup scoop of cold cottage cheese and sliced avocado.
  12. Finish by drizzling hot honey generously over the cottage cheese and beef, then garnish with fresh cilantro and jalapeño slices.
