Ingredients

  • 8 oz penne pasta
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish
  • 1 tbsp olive oil

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic; sauté until onions are translucent.
  3. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 7–10 minutes. Drain any excess fat.
  4. Stir in diced tomatoes with their juices, beef broth, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
  5. Lower the heat and stir in Greek yogurt and Parmesan cheese until the sauce becomes creamy and well combined.
  6. Add the cooked pasta to the skillet and toss until well coated in the creamy beef sauce. Let the mixture sit briefly to thicken.
  7. Garnish with fresh basil or parsley and serve warm.
