Baked, creamy high protein blueberry cottage cheese breakfast bowls perfect for meal prep. An easy, make-ahead healthy breakfast.
Ingredients
- 2 cups low-fat cottage cheese
- 4 large eggs
- ½ cup rolled oats
- 2 tablespoons maple syrup
- 1 teaspoon vanilla
- ½ teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- 1½ cups fresh blueberries
Instructions
- Preheat the oven to 375°F and lightly grease four oven-safe bowls or ramekins.
- In a blender, add the cottage cheese, eggs, oats, maple syrup, vanilla, cinnamon, and salt. Blend until smooth and creamy.
- Divide the mixture evenly between the prepared bowls.
- Sprinkle the blueberries evenly over the top of each bowl.
- Place the bowls on a baking sheet and transfer to the oven.
- Bake for 30 to 35 minutes until the centers are set and the tops are lightly golden.
- Remove from the oven and cool for 5 minutes before serving.
