Description

This creamy tzatziki chicken salad uses Greek yogurt instead of mayonnaise and includes fresh herbs and crunchy vegetables for a simple, healthy lunch or meal prep option.


Ingredients

  • 3 cups cooked chicken, shredded
  • 1 cup plain Greek yogurt
  • 1 cup finely grated cucumber, moisture squeezed out
  • 1 cup diced cucumber
  • 1 half cup diced celery
  • 1 half cup diced red onion
  • 1 half cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, finely grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1 half teaspoon black pepper


Instructions

  1. In a large mixing bowl, stir together the Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and black pepper until smooth and creamy.
  2. Add the shredded chicken, diced cucumber, celery, red onion, and feta cheese.
  3. Gently fold everything together until evenly coated in the dressing.
  4. Taste and adjust seasoning with more lemon juice, salt, or pepper if needed.
  5. Cover and refrigerate for at least 30 minutes to let the flavors develop.
