Description
This creamy tzatziki chicken salad uses Greek yogurt instead of mayonnaise and includes fresh herbs and crunchy vegetables for a simple, healthy lunch or meal prep option.
Ingredients
- 3 cups cooked chicken, shredded
- 1 cup plain Greek yogurt
- 1 cup finely grated cucumber, moisture squeezed out
- 1 cup diced cucumber
- 1 half cup diced celery
- 1 half cup diced red onion
- 1 half cup crumbled feta cheese
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, finely grated
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1 half teaspoon black pepper
Instructions
- In a large mixing bowl, stir together the Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and black pepper until smooth and creamy.
- Add the shredded chicken, diced cucumber, celery, red onion, and feta cheese.
- Gently fold everything together until evenly coated in the dressing.
- Taste and adjust seasoning with more lemon juice, salt, or pepper if needed.
- Cover and refrigerate for at least 30 minutes to let the flavors develop.
- Serve chilled in wraps, over greens, or with crackers.
