Description
This frozen strawberry yogurt bark combines creamy Greek yogurt with fresh strawberries, crunchy granola, and nutritious seeds for a healthy dessert or snack that looks as beautiful as it tastes. Spread the mixture on a baking sheet, freeze, and break into shards for grab-and-go portions.
Ingredients
- 2½ cups full-fat Greek yogurt
- ½ cup freeze-dried strawberries, crushed into powder
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon ground cinnamon
- ½ cup fresh strawberries, thinly sliced
- ⅓ cup granola
- 2 tablespoons chia seeds
- 2 tablespoons pumpkin seeds
- 2 tablespoons sliced almonds
Instructions
- Place freeze-dried strawberries in a zip-top bag and crush into a fine powder using a rolling pin or cup.
- Line a large rimmed baking sheet with parchment paper and set aside near your freezer.
- Combine Greek yogurt, crushed freeze-dried strawberry powder, maple syrup, vanilla extract, and cinnamon in a large bowl and stir until completely smooth and pink.
- Pour the yogurt mixture onto the prepared baking sheet and spread into an even rectangular shape about ¼ inch thick using an offset spatula.
- Arrange fresh strawberry slices evenly across the surface of the yogurt, pressing them in slightly.
- Sprinkle granola, chia seeds, pumpkin seeds, and sliced almonds evenly over the entire surface.
- Gently press toppings into the yogurt with your hand to help them adhere during freezing.
- Transfer the baking sheet to the freezer and freeze for 2 to 3 hours until completely solid and hard.
- Remove from freezer and break the frozen bark into irregular shards or cut into squares, then store in a freezer-safe container at 0°F or below for food safety.
Notes
- Use full-fat Greek yogurt for the creamiest texture and best structural integrity when frozen.
- Crush freeze-dried strawberries into a fine powder so they blend smoothly into the yogurt without chunks.
- Spread the yogurt mixture evenly at ¼ inch thickness to ensure uniform freezing and easy breaking.
- Press toppings gently into the yogurt surface before freezing so they do not fall off when broken into shards.
- Let bark sit at room temperature for 2 to 3 minutes before breaking for cleaner, more controlled shards.
- Store frozen bark shards in an airtight freezer-safe container for up to 1 month, separating layers with parchment paper to prevent sticking.
- Remove from freezer 3 to 5 minutes before eating to allow slight softening for best texture.
