Ingredients

- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 zucchini sliced
- 1 yellow squash sliced
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 2 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
Instructions
- Heat the olive oil in a large skillet over medium high heat.
- Add the broccoli and cook for 3 minutes, stirring occasionally.
- Add the bell peppers, zucchini, yellow squash, and mushrooms. Cook for 5 to 6 minutes until the vegetables are tender crisp.
- Stir in the garlic, Italian seasoning, salt, and black pepper. Cook for 1 minute until fragrant.
- Remove the skillet from the heat and drizzle with lemon juice.
- Sprinkle with fresh parsley before serving.
