Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 1 yellow squash sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Heat the olive oil in a large skillet over medium high heat.
  2. Add the broccoli and cook for 3 minutes, stirring occasionally.
  3. Add the bell peppers, zucchini, yellow squash, and mushrooms. Cook for 5 to 6 minutes until the vegetables are tender crisp.
