  • Filling: 7 oz dried figs, soaked and drained
  • 3 tbsp fresh orange juice
  • 1 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt


Instructions

  1. Make the fig filling: Blend soaked figs with orange juice, maple syrup, cinnamon, and salt until smooth. Chill.
  2. Make the crust: Mix almond flour, oat flour, and salt. Add coconut oil, maple syrup, orange juice, and zest. Stir until a soft dough forms.
  3. Roll out the dough into a rectangle about 1/4 inch thick on wax or parchment paper.
  4. Cut the dough lengthwise into two long strips. Spoon the fig filling down the center of each strip. Fold the dough over the filling to seal.
  5. Cut into 18 cookies. Cover and refrigerate for at least 1 hour before serving.
