Ingredients
- Crust: 1 3/4 cups almond flour
- 1 1/2 cups oat flour
- 1/3 cup maple syrup
- 1 tbsp melted coconut oil
- 2 tbsp fresh orange juice
- Zest of 1 orange
- 1/2 tsp salt
- Filling: 7 oz dried figs, soaked and drained
- 3 tbsp fresh orange juice
- 1 tbsp maple syrup
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
Instructions
- Make the fig filling: Blend soaked figs with orange juice, maple syrup, cinnamon, and salt until smooth. Chill.
- Make the crust: Mix almond flour, oat flour, and salt. Add coconut oil, maple syrup, orange juice, and zest. Stir until a soft dough forms.
- Roll out the dough into a rectangle about 1/4 inch thick on wax or parchment paper.
- Cut the dough lengthwise into two long strips. Spoon the fig filling down the center of each strip. Fold the dough over the filling to seal.
- Cut into 18 cookies. Cover and refrigerate for at least 1 hour before serving.

- Store in the fridge for up to 1 month for the best texture.
