Ingredients
- 2 cups shredded cooked chicken breast or rotisserie chicken
- 2 large avocados, halved and pitted
- ⅓ cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- Juice of 1 lemon
- 1 small red onion, finely chopped
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- Red pepper flakes for garnish (optional)
Instructions
- Scoop a small portion of avocado flesh from each half to create space for the filling. Dice the scooped avocado and place it in a medium bowl.
- Add shredded chicken, Greek yogurt, Dijon mustard, lemon juice, red onion, parsley, salt, and pepper to the bowl. Mix well to combine everything.
- Spoon the chicken salad mixture evenly into each avocado half.
- Sprinkle with parsley and a pinch of red pepper flakes if you want extra spice.
- Serve immediately.
