Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup baby spinach
  • 1 cup shredded cheddar cheese
  • 4 large whole wheat tortillas


Instructions

  1. In a bowl, whisk together eggs, milk, salt, and black pepper until well combined.
  2. Heat olive oil in a large skillet over medium heat. Add bell peppers and onion and cook for 4 to 5 minutes until softened.
  3. Stir in black beans and spinach and cook until spinach is wilted.
  4. Pour in the egg mixture and cook, stirring gently, until eggs are set but still soft.
  5. Remove from heat and stir in shredded cheese until melted.
  6. Warm tortillas slightly to make them easier to roll.
  7. Divide the filling evenly among tortillas, fold in the sides, and roll tightly into burritos.
