Description
Healthy breakfast burrito with turkey sausage, scrambled eggs, and veggies. A high protein, meal prep friendly breakfast ready in 25 minutes.
Ingredients
- 1 pound ground turkey breakfast sausage
- 6 large eggs
- 2 tablespoons milk
- 1/2 teaspoon kosher salt divided
- 1/4 teaspoon black pepper divided
- 1 tablespoon olive oil
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow onion
- 1 cup fresh baby spinach chopped
- 1/2 cup shredded cheddar cheese
- 4 large whole wheat tortillas
- 1/2 cup salsa
Instructions
- Heat a large skillet over medium heat. Add the ground turkey sausage and cook for 6 to 8 minutes, breaking it into crumbles, until fully cooked and browned. Transfer to a plate and set aside.
- In a bowl, whisk together eggs, milk, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until well combined.
- In the same skillet, add olive oil. Add diced bell pepper and onion and cook for 3 to 4 minutes until softened. Stir in chopped spinach and cook for 1 minute until wilted.
- Reduce heat to medium low. Pour the egg mixture into the skillet with the vegetables. Gently stir with a spatula, cooking for 3 to 4 minutes until the eggs are softly set but not dry.
- Stir the cooked turkey sausage back into the skillet and sprinkle in the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Mix gently and remove from heat.
- Warm the whole wheat tortillas in a dry skillet for about 20 seconds per side until soft and pliable.
- Divide the egg and sausage mixture evenly among the tortillas. Top each with shredded cheddar cheese and 2 tablespoons salsa.
- Fold in the sides and roll tightly into burritos. Serve immediately or wrap tightly in foil for meal prep.
Notes
- Cook ground turkey to an internal temperature of 165 degrees F as measured with a meat thermometer to ensure it is safe to eat.
