Description

Make soft, fluffy, and naturally sweet banana oat muffins. These are easy to prepare and suit breakfast or a quick snack.


Ingredients

  • 1.5 cups rolled oats
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 ripe bananas mashed
  • 0.5 cup honey
  • 0.5 cup plain Greek yogurt
  • 0.25 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper liners.
  2. In one bowl, whisk together the oats, flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mix the mashed bananas, honey, Greek yogurt, oil, eggs, and vanilla until smooth.
  4. Add the dry ingredients into the wet mixture and stir gently until just combined. Do not overmix.
  5. Divide the batter evenly into the muffin cups, filling each about three quarters full.
  6. Bake for 18 to 20 minutes until the muffins are golden and a toothpick inserted in the center comes out clean.
  7. Let the muffins cool slightly before you serve them.
