Description

Ingredients
- 1.5 cups rolled oats
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 ripe bananas mashed
- 0.5 cup honey
- 0.5 cup plain Greek yogurt
- 0.25 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F and line a muffin pan with paper liners.
- In one bowl, whisk together the oats, flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, mix the mashed bananas, honey, Greek yogurt, oil, eggs, and vanilla until smooth.
- Add the dry ingredients into the wet mixture and stir gently until just combined. Do not overmix.
- Divide the batter evenly into the muffin cups, filling each about three quarters full.
- Bake for 18 to 20 minutes until the muffins are golden and a toothpick inserted in the center comes out clean.
- Let the muffins cool slightly before you serve them.
