Ingredients
- 2 tablespoons olive oil
- 1 small shallot, finely diced
- ⅓ cup pure maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- ¼ teaspoon kosher salt
- ⅘ teaspoon black pepper
- 10 ounces mixed salad greens
- 1 honeycrisp apple, thinly sliced
- 1 ripe pear, thinly sliced
- 1 cup thinly sliced carrots
- ⅓ cup toasted pecans, chopped
- ¼ cup crumbled feta or goat cheese
Instructions
- Heat olive oil in a small saucepan over medium heat. Add shallot and cook for 2 minutes until softened and fragrant.
- Whisk in maple syrup, vinegar, Dijon mustard, salt, and pepper. Reduce heat to low and simmer for 1 to 2 minutes until slightly thickened. Remove from heat and keep warm.
- In a large salad bowl, layer greens, apple slices, pear slices, carrots, pecans, and crumbled cheese.
- Drizzle warm maple dressing over the salad just before serving.
- Gently toss to coat the greens and fruit evenly.
- Serve immediately while the dressing is still warm.
