A warm and comforting Hearty Hamburger Noodle Soup with Parmesan, perfect for chilly weather.
Ingredients
- Ground Beef: 1 lb
- Onion: 1 medium, diced
- Garlic: 2 cloves, minced
- Carrots: 2, diced
- Celery: 2 stalks, diced
- Bell Pepper: 1, diced (red or yellow)
- Beef Broth: 6 cups
- Diced Tomatoes: 1 can (14.5 oz)
- Egg Noodles: 2 cups
- Herbs: 1 tsp dried oregano, 1 tsp dried basil
- Spinach: 2 cups, fresh
- Parmesan Cheese: 1 cup, grated
- Salt and Pepper: to taste
Instructions
- Heat a large pot over medium heat and brown the ground beef (or turkey) for 5-7 minutes, breaking it apart as it cooks. Drain excess fat.
- Add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
- Add diced carrots, celery, and bell pepper, cooking for another 5 minutes.
- Pour in beef broth and diced tomatoes, bring to a boil, then reduce to a simmer for 5 minutes.
- Add egg noodles, oregano, basil, salt, and pepper, simmer for 10 minutes until noodles are tender.
- Stir in fresh spinach and cook for 1-2 minutes until wilted. Remove from heat and add grated Parmesan cheese, stirring until melted.
- Serve hot, garnished with fresh parsley if desired.

- For a lighter option, use ground turkey instead of beef.
- Customize with additional vegetables like zucchini or corn.
