Description

A warm and comforting Hearty Hamburger Noodle Soup with Parmesan, perfect for chilly weather.


Ingredients

  • Ground Beef: 1 lb
  • Onion: 1 medium, diced
  • Garlic: 2 cloves, minced
  • Carrots: 2, diced
  • Celery: 2 stalks, diced
  • Bell Pepper: 1, diced (red or yellow)
  • Beef Broth: 6 cups
  • Diced Tomatoes: 1 can (14.5 oz)
  • Egg Noodles: 2 cups
  • Herbs: 1 tsp dried oregano, 1 tsp dried basil
  • Spinach: 2 cups, fresh
  • Parmesan Cheese: 1 cup, grated
  • Salt and Pepper: to taste

Instructions

  1. Heat a large pot over medium heat and brown the ground beef (or turkey) for 5-7 minutes, breaking it apart as it cooks. Drain excess fat.
  2. Add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
  3. Add diced carrots, celery, and bell pepper, cooking for another 5 minutes.
  4. Pour in beef broth and diced tomatoes, bring to a boil, then reduce to a simmer for 5 minutes.
  5. Add egg noodles, oregano, basil, salt, and pepper, simmer for 10 minutes until noodles are tender.
  6. Stir in fresh spinach and cook for 1-2 minutes until wilted. Remove from heat and add grated Parmesan cheese, stirring until melted.
  7. Serve hot, garnished with fresh parsley if desired.
