Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup cooked white rice
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook for 6 to 8 minutes, breaking it apart, until browned.
- Stir in salt, black pepper, chili powder, cumin, paprika, and garlic powder. Cook for 2 minutes until fragrant.
- Add black beans and corn to the skillet and cook for 3 to 4 minutes until heated through.
- Divide cooked rice among serving bowls.
- Top with the seasoned turkey mixture.
- Add cherry tomatoes, shredded cheddar cheese, diced avocado, and cilantro.
- Drizzle with lime juice before serving.
- Serve immediately. Ensure ground turkey reaches an internal temperature of 160°F before serving.
