Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup cooked white rice
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook for 6 to 8 minutes, breaking it apart, until browned.
  2. Stir in salt, black pepper, chili powder, cumin, paprika, and garlic powder. Cook for 2 minutes until fragrant.
  3. Add black beans and corn to the skillet and cook for 3 to 4 minutes until heated through.
  4. Divide cooked rice among serving bowls.
  5. Top with the seasoned turkey mixture.
  6. Add cherry tomatoes, shredded cheddar cheese, diced avocado, and cilantro.
  7. Drizzle with lime juice before serving.
  8. Serve immediately. Ensure ground turkey reaches an internal temperature of 160°F before serving.
