Description

Ground turkey and sweet potato skillet packed with protein and flavor. A quick, healthy one-pan dinner perfect for busy summer nights.


Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced red bell pepper
  • 1 cup fresh spinach, chopped
  • 1/4 cup low sodium chicken broth
  • 1 tablespoon lemon juice


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8 to 10 minutes, stirring occasionally, until they begin to soften and lightly brown.
  2. Add diced onion and cook for 3 minutes until softened.
  3. Push the vegetables to one side of the skillet and add the ground turkey. Cook for 6 to 8 minutes, breaking it apart with a spatula, until no longer pink.
  4. Stir in garlic powder, paprika, cumin, salt, and black pepper, mixing well to coat the turkey and vegetables.
  5. Add diced red bell pepper and chicken broth. Stir and cover the skillet. Cook for 5 to 7 minutes until the sweet potatoes are fork tender.
  6. Uncover and stir in the chopped spinach. Cook for 1 to 2 minutes until wilted.
  7. Drizzle lemon juice over the skillet and stir gently to combine.
  8. Remove from heat and let rest for 2 minutes before serving.

Notes

  • Cut the sweet potatoes into even pieces so they cook at the same rate.
  • If you prefer crisp edges, let them sit undisturbed for a few minutes while browning.
