Description
Ground turkey and sweet potato skillet packed with protein and flavor. A quick, healthy one-pan dinner perfect for busy summer nights.
Ingredients
- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced into 1/2 inch cubes
- 1 tablespoon olive oil
- 1/2 cup diced yellow onion
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced red bell pepper
- 1 cup fresh spinach, chopped
- 1/4 cup low sodium chicken broth
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8 to 10 minutes, stirring occasionally, until they begin to soften and lightly brown.
- Add diced onion and cook for 3 minutes until softened.
- Push the vegetables to one side of the skillet and add the ground turkey. Cook for 6 to 8 minutes, breaking it apart with a spatula, until no longer pink.
- Stir in garlic powder, paprika, cumin, salt, and black pepper, mixing well to coat the turkey and vegetables.
- Add diced red bell pepper and chicken broth. Stir and cover the skillet. Cook for 5 to 7 minutes until the sweet potatoes are fork tender.
- Uncover and stir in the chopped spinach. Cook for 1 to 2 minutes until wilted.
- Drizzle lemon juice over the skillet and stir gently to combine.
- Remove from heat and let rest for 2 minutes before serving.
Notes
- Cut the sweet potatoes into even pieces so they cook at the same rate.
- If you prefer crisp edges, let them sit undisturbed for a few minutes while browning.
