Description
This flavorful ground beef rice bowl is loaded with garlicky vegetables, savory sauce, and fluffy rice for a balanced, easy weeknight meal.
Ingredients
- 1 pound ground beef (90% lean)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon olive oil
- 1 cup sliced mushrooms
- 1 zucchini, sliced into rounds
- 1 red bell pepper, sliced
- 1 1/2 cups broccoli florets
- Salt and black pepper to taste
- 2 cups cooked jasmine or basmati rice
- 1 teaspoon toasted sesame seeds (optional)
Instructions
- In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Set aside.
- Heat a large skillet over medium-high heat. Add olive oil, then mushrooms, zucchini, bell pepper, and broccoli. Sauté for 5–7 minutes until tender-crisp. Remove from pan and set aside.
- In the same skillet, add ground beef and garlic. Cook for 6–8 minutes, breaking it apart with a spoon, until browned and cooked through.
- Pour the sauce over the cooked beef and stir for 2 minutes until it thickens slightly and coats the meat evenly.
- Return the vegetables to the skillet and toss everything together for another minute to warm through.
- Spoon cooked rice into bowls and top with the beef and vegetable mixture.
- Garnish with sesame seeds if desired and serve hot.
