Description

This flavorful ground beef rice bowl is loaded with garlicky vegetables, savory sauce, and fluffy rice for a balanced, easy weeknight meal.


Ingredients

  • 1 pound ground beef (90% lean)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 1 zucchini, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 1/2 cups broccoli florets
  • Salt and black pepper to taste
  • 2 cups cooked jasmine or basmati rice
  • 1 teaspoon toasted sesame seeds (optional)


Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Set aside.
  2. Heat a large skillet over medium-high heat. Add olive oil, then mushrooms, zucchini, bell pepper, and broccoli. Sauté for 5–7 minutes until tender-crisp. Remove from pan and set aside.
  3. In the same skillet, add ground beef and garlic. Cook for 6–8 minutes, breaking it apart with a spoon, until browned and cooked through.
  4. Pour the sauce over the cooked beef and stir for 2 minutes until it thickens slightly and coats the meat evenly.
  5. Return the vegetables to the skillet and toss everything together for another minute to warm through.
  6. Spoon cooked rice into bowls and top with the beef and vegetable mixture.
  7. Garnish with sesame seeds if desired and serve hot.

Notes

  • For meal prep, store rice and beef-vegetable mix separately to keep the texture perfect when reheating.
