A hearty one pan dinner featuring ground beef and potatoes, made quickly with simple ingredients for easy weeknight meals.
Ingredients
- 1 pound ground beef
- 1½ pounds russet potatoes peeled and diced into ½ inch cubes
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 2 cloves garlic minced
- 1 teaspoon paprika
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced potatoes in an even layer and cook for 10 to 12 minutes, stirring occasionally, until lightly browned and just tender.
- Push the potatoes to one side of the skillet and add the ground beef. Cook for 5 to 6 minutes, breaking it apart, until no longer pink.
- Add the diced onion and cook for 2 minutes until softened.
- Stir in the garlic, paprika, parsley, salt, and black pepper and cook for 1 minute until fragrant.
- Stir everything together and continue cooking for 3 to 4 minutes until the potatoes are fully tender and coated in seasoning.
- Taste and adjust seasoning if needed, then remove from heat and serve hot.
Notes
- Cutting the potatoes evenly ensures they cook through at the same time as the beef.
- Ground beef is fully cooked when it reaches an internal temperature of 160°F.
