Description

A hearty one pan dinner featuring ground beef and potatoes, made quickly with simple ingredients for easy weeknight meals.


Ingredients

  • 1 pound ground beef
  • pounds russet potatoes peeled and diced into ½ inch cubes
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes in an even layer and cook for 10 to 12 minutes, stirring occasionally, until lightly browned and just tender.
  3. Push the potatoes to one side of the skillet and add the ground beef. Cook for 5 to 6 minutes, breaking it apart, until no longer pink.
  4. Add the diced onion and cook for 2 minutes until softened.
  5. Stir in the garlic, paprika, parsley, salt, and black pepper and cook for 1 minute until fragrant.
  6. Stir everything together and continue cooking for 3 to 4 minutes until the potatoes are fully tender and coated in seasoning.
  7. Taste and adjust seasoning if needed, then remove from heat and serve hot.

Notes

  • Cutting the potatoes evenly ensures they cook through at the same time as the beef.
  • Ground beef is fully cooked when it reaches an internal temperature of 160°F.
