Description
Juicy grilled salmon topped with a zesty avocado salsa made with lime, cilantro, and tomato. A quick, healthy dinner ready in under 25 minutes.
Ingredients
- 4 salmon fillets (6 ounces each, about 1 inch thick)
- 1 tablespoon olive oil
- 1 clove garlic, minced
- ½ teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 ripe avocado, diced
- ½ cup diced cherry tomatoes
- 2 tablespoons finely diced red onion
- 2 tablespoons chopped cilantro
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- Salt and pepper to taste
- Lime wedges (to serve)
- Cooked brown rice or salad greens (to serve)
Instructions
- Preheat grill or grill pan over medium-high heat. Lightly oil the grates.
- In a small bowl, mix olive oil, garlic, chili powder, cumin, onion powder, salt, and black pepper to form a paste.
- Brush the spice mixture evenly over both sides of the salmon fillets.
- Grill salmon for 4 to 5 minutes per side, depending on thickness, until lightly charred and it flakes easily with a fork. The internal temperature should reach 145°F.
- While the salmon cooks, combine avocado, tomatoes, red onion, cilantro, olive oil, lime juice, salt, and pepper in a medium bowl. Toss gently to combine.
- Transfer grilled salmon to a serving plate. Spoon avocado salsa generously over the top.
- Serve immediately with lime wedges and your choice of rice or salad.
