Description
This grilled corn salad is smoky, sweet, and bursting with fresh flavor. Charred corn is tossed with crisp vegetables and a bright lime dressing for an easy summer side that pairs perfectly with any meal.
Ingredients
- 4 ears corn husked
- 1 tablespoon olive oil
- 1 cup cherry tomatoes halved
- 1/2 cup red onion finely diced
- 1/4 cup fresh cilantro chopped
- For the dressing:
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat grill to medium-high heat.
- Brush corn with olive oil and place on the grill. Cook for 8 to 10 minutes, turning occasionally, until lightly charred.
- Remove from grill and let cool slightly. Cut kernels off the cob.
- In a large bowl combine grilled corn, cherry tomatoes, red onion, and cilantro.
- In a small bowl whisk together lime juice, olive oil, salt, and black pepper.
- Pour dressing over the salad and toss to combine.
- Serve warm or chilled.

- For extra flavor, let the salad sit for 15 minutes before serving.
