Description

This grilled corn salad is smoky, sweet, and bursting with fresh flavor. Charred corn is tossed with crisp vegetables and a bright lime dressing for an easy summer side that pairs perfectly with any meal.


Ingredients

  • 4 ears corn husked
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely diced
  • 1/4 cup fresh cilantro chopped
  • For the dressing:
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat grill to medium-high heat.
  2. Brush corn with olive oil and place on the grill. Cook for 8 to 10 minutes, turning occasionally, until lightly charred.
  3. Remove from grill and let cool slightly. Cut kernels off the cob.
  4. In a large bowl combine grilled corn, cherry tomatoes, red onion, and cilantro.
  5. In a small bowl whisk together lime juice, olive oil, salt, and black pepper.
  6. Pour dressing over the salad and toss to combine.
  7. Serve warm or chilled.

  • For extra flavor, let the salad sit for 15 minutes before serving.
