Ingredients
- 1 pound boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ¼ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Juice of ½ lime
- 1 ripe mango, diced
- 1 avocado, diced
- ¼ cup red onion, finely chopped
- ½ red bell pepper, diced
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Pinch of salt
Instructions
- Whisk olive oil, paprika, cumin, garlic powder, chili powder, salt, pepper, and lime juice in a bowl. Add chicken and coat it well. Marinate for 15 minutes at room temperature.
- Heat a grill or grill pan to medium-high heat. Grill chicken for 5–6 minutes per side, until golden and cooked through to 165°F. Rest the chicken for 5 minutes.
- Combine mango, avocado, red onion, bell pepper, cilantro, lime juice, and salt in a bowl while the chicken cooks. Toss gently to mix.
- Slice the chicken and arrange it on plates or a platter. Spoon mango salsa over the chicken.
- Serve right away with rice, quinoa, or salad.
