Description

These chicken broccoli bowls feature juicy grilled chicken, tender broccoli, and a simple creamy garlic sauce. They are healthy, filling, and great for weeknight dinners or meal prep.


Ingredients

  • 1 pound boneless skinless chicken breasts (about ¾ inch thick)
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup plain Greek yogurt
  • 2 cloves garlic finely minced
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper


Instructions

  1. Pat the chicken dry and brush both sides with olive oil. Season evenly with salt and black pepper.
  2. Heat a grill pan or outdoor grill over medium high heat.
  3. Grill the chicken for 6 to 7 minutes per side until nicely charred and the internal temperature reaches 165°F.
  4. While the chicken cooks, steam the broccoli for 4 to 5 minutes until bright green and just tender.
  5. In a small bowl, whisk together Greek yogurt, garlic, lemon juice, salt, and black pepper until smooth.
  6. Let the chicken rest for 5 minutes, then slice against the grain.
  7. Divide the broccoli between bowls, top with sliced chicken, and drizzle with creamy garlic sauce.
